In a shallow bowl beat together the eggs, milk, cinnamon and vanilla.
Spray a large non-stick frying pan with cooking spray and heat over medium heat.
Dunk each slice of bread in the egg mixture, soaking both sides.
Place in the pan and cook each slice about 3–4 minutes per side until golden.
Serve with sliced fruit and maple syrup.
